WHW: Yummy (skinny) Taco Dip

Hey ya'll and welcome to another what's hap-pinning Wednesday! I haven't shared a recipe in awhile because honestly I have really been lacking in the cooking department. I have GOT to step up my game with some new recipes or just meal planning in general. I tried meal planning back in 2014 (I know...a long time ago) and it went so well! Now with a part time job, church obligations, travel and a toddler - it seems so out of reach. However, I do know that it would in fact make things EASIER! Can ya'll shoot me your favorite meal planning tips, cheat sheets and ideas? I'd LOVE to hear from ya'll and see what works.

Last night I was craving my usual Mexican and decided to do a healthier version of good ole' taco dip. I packed my lunch yesterday (fresh salad from Mama's garden with all the fixin's, cottage cheese and blueberries) and was doing so great and then my boss brought in my favorite Costco brand of 7-later dip for the office. (insert hand to face emoji) I of course helped myself to a little bit and instantly knew what I was making for dinner. This recipe went over really well and is so easy to make! (disclaimer: its only 'skinny' if you and hubs don't finish it in one night)

Skinny Taco Dip 
  • 8 ounces light cream cheese, softened
  • 1 cup fat free Greek yogurt
  • 1 cup of your favorite salsa
  • 1 tablespoon taco seasoning
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • 1 Roma tomato, diced
  • 1 small avocado, diced
  • 2 green onions, sliced
  • 1 tablespoon sliced olives
  1. Combine softened cream cheese, greek yogurt, salsa and taco seasoning until smooth and well combined. Spread into a rectangle baking dish or pie plate (I used an 11"x7" baking dish) . Refrigerate for an hour to let flavors combine (optional). Top with remaining ingredients. Serve with tortilla chips.

  1. You had me at skinny taco! Meal planning and being a working mom is tough. Some weeks I do a great job of heading to the store and grabbing everything I need for the week and others (like this current one) I wing it. Our microwave has been broken for a month too...which means I cannot defrost meat in a pinch either and that can sure put a kink in things when I want to just make some quick tacos or spaghetti!

  6. Oooh this looks good. I need to meal plan more too. I was doing okay for awhile there. I think writing down ingredients you need during the week is a good idea, so you have the list when you go shopping and then make all your food one day during the weekend!

  9. This sounds like the perfect healthy swap! I love meal planning (I know, I'm weird ;)) I have an Erin Condren planner and have the meal plan clip ins. i also have a wipe board on my fridge listing everything in the freezer fridge that I have at my disposal. I also have pinterest boards for every type of food or meal. I sit down on Friday night (with a glass of wine) and plan the following week's meals and grocery list and do my shopping saturday morning. If I know hectic times are coming, I sometimes plan two weeks in advance. It is hard to balance it all!

  12. This looks so good! I need to save this and use it for a cookout we're hosting Memorial Day weekend! Side note, one of my new favorite meals that's super easy and clean is to pound out a chicken breast, put it on a baking sheet with beussel sprouts - roast everything at like 400 for 25 minutes. Then add some basil, tomatoes, mozzarella and balsamic to the chicken! So delicious
